Crispy Honey Chicken:
Ingredients:
Boneless chicken 1 cup
Mustard paste 1 tsp
Corn flour 1 tbsp
Rice flour as required
Oil for frying
Carrot chopped ¼ cup
Spring onion chopped 1 tbsp
Honey ¼ cup
Lemon juice 2 tbsp
Red chili crushed 1 tsp
Salt to taste
Chicken powder 1 tsp
White pepper ½ tsp
Corn flour (diluted) as required
Water as required
Method:
Mix boneless chicken, mustard paste and corn flour well. Now coat chicken in rice flour, dip in water and coat again in rice flour. Fry the chicken on low flame. In a wok, cook honey, lemon juice, crushed red chillies, salt, chicken powder, white pepper, carrot and water until boiling. Add diluted corn flour to thicken the sauce. Mix chicken in the sauce, dish out and serve garnished with spring onions.
Chargha Drumsticks:
Ingredients
Chicken drumsticks 6 to 8
Water 2 cups
Vinegar ¼ cup
Salt 1 tsp
For Marinade:
Yogurt ½ cup
Oil ¼ cup
Ginger & garlic paste 1 tbsp
Green chilli paste 1 tbsp
Salt to taste
Red chilli powder 1 tbsp
Turmeric powder ½ tsp
Cumin powder 1 tbsp
Garam masala powder 1 tsp
Citric acid 1 tsp
Red orange food colour ¼ tsp
Oil for frying
For Gur ka Raita:
Yogurt 1 cup
Mayonnaise 2 tbsp
Jaggery ¼ cup
Salt to taste
Cumin powder ½ tsp
Method:
Mix vinegar, salt and water and leave drumsticks soaked in for 25 to 30 minutes. To prepare marinade, mix yogurt, oil, ginger garlic paste, green chilli paste, salt, red chilli powder, turmeric powder, cumin powder, garam masala powder, citric acid and red orange food colour. Marinate drumsticks for 2 hours in refrigerator. Heat oil in a wok and fry drumsticks. Sprinkle chaat masala and lemon juice and serve with gur ka raita. To make gur ka raita, mix yogurt, mayonnaise, jaggery, salt and cumin powder well.
Vegetable Chinese Rice:
Ingredients
Boiled Rice 2 cups
Oil ¼ cup
Eggs 2
Yellow food color few drops
Carrot chopped ½ cup
Cabbage chopped ¼ cup
Capsicum chopped ¼ cup
Spring onion chopped ¼ cup
White pepper 1 tsp
Salt as required
Sugar 1 tsp
Chicken powder 1 tbsp
Method:
Heat oil in a wok and fry eggs. Now add chopped carrot, chopped cabbage and chopped capsicum and cook for 1 minute. Add boiled rice, white pepper, salt, sugar, chicken powder and yellow food colour and mix well. Dish out and garnish with chopped spring onions before serving.
